Easter!!

Easter in our house has always been about food. Mike's family always does a Ukrainian breakfast. A sweet bread you decorate; paska. Kilbasa sausage. Eggs.

This year of course there is an Easter basket for Z and decorating eggs. A pretty nice day.

At Home - A Short History of Private Life

I've been reading At Home by Bill Bryson.  It is really interesting.  He goes through a short history of home life and how modern life has evolved.  Something interesting from yesterday was the list of what people ate in 1851 compared with now.  I didn't note the comparison amounts (although it was a lot lower than what they ate in 1851) but here was the list for that year (so annually):
8 lbs of pears
9 lbs of grapes and other soft fruit
18 lbs of dried fruit
32 lbs of onions
40 lbs of turnips/rutabagas
70 lbs of cabbage
30 lbs of sugar

I've decided that starting April 1 2013 I will keep track of my vegetable and fruit intake.  Sugar as well.  I will see next April what my annual intake is.  Care to join me on this?  Are we better or worse than the 1851 British?

Zooey's friend Kai.

  Zooey turned one on Friday.  We had a little celebration with family and a few friends.  It was great fun to see everyone and to see Zooey's excitement.  Time does seem to have sped up.  A year ago it seemed like we would never get out of the NICU.  Now, I'm worried I'll close my eyes and she will be off at college.  This must be what other parents have talked about.

Cakes ...

I have found my problem. Cake 1, flopped into a brownie (recipe called for 2 large eggs and I used 2 small eggs). Cake 2, over flowed like lava (recipe called 2 large eggs and I egg yolk and I used 3 small eggs and one yolk). Cake 3, separated into liquid fudge and cake (recipe called for 2 Xxl eggs and I used 4 small ones). Tonight - cake 4 was made. It called for 2 large eggs. I used 2 large eggs and the cakes came out perfect.

How frustrating!! The eggs from our chickens are small :(

Weekend Baking

Zooey is turning one this coming Friday. We did sugar cookies for her to take to daycare and then I did a tester cake. I want to do a chocolate cake with strawberry icing. The icing came out amazing and the cake sucks. I'll try some more recipes this week.

Spring??

It rained a lot yesterday. The winds are picking up too. Spring is just around the corner!

Weekend Exploring

We spent the weekend in Utah and Colorado exploring biking and hiking trails. We got to see dinosaur bones, meet great people and thrift store shopping. It was a great trip!
